Ketchup.

Or did I mean catch up?

Either way, I am going to stop blog-slacking, and let you all know about the cheese fries, and room de-cluttering we did two weekends ago, and also fill you in on the weekend that just passed as well.

First order of business:
Eskimo Joe's Cheese Fries.


They were pretty darn delicious. They are hand cut potatoes that were fried in oily goodness, topped with pounds of cheese, and upon our request, some jalapenos to spice it up a bit (Also, upon request you could get chili, bacon, extra cheese, and anything else you could want). Also, very important to note, we had ranch dressing to dip them in. The good ranch, none of this hidden valley stuff. This was buttermilk ranch, and the fries dipped in ranch and ketchup were really, really delicious! The rest of the food was definitely sub-par, but the waiter more than made up for my salty blackened chicken sandwich by comping my food- I would say Eskimo Joe's is a GREAT burger and fries joint. We even came home with T-Shirts to commemorate our experience.

Final Verdict on the Cheese Fries: OUTSTANDING.

Moving on.....

Since we had a three day weekend for (MLK Day), we didn't go about our normal Sunday- Rest Day routine- and moved some furniture to a storage slot in our garage, and put together Dallas' drum set in the spare room! He is excited to have the drums set up and I am excited to have a usable space!

Monday we hung out, and got together with the Riley's and the Barr's for dinner. We made the best tortilla soup that I have ever tasted, and some quesadillas (Go ahead, click the link, and make it! You wont regret it!)! Such a great time!

This last weekend, we went out with some friends Friday night for dinner, and went to Amy's house to play some Crud! Saturday, me and the girls went to get pedicures, and did a little bit of Antique shopping. Later that night, we went with the guys for a few games of bowling, and made some banana splits after. Sunday, Susan and I decided we needed to go to Oklahoma City to do some shopping, and she came home with the Kitchenaid Professional Grade Stand Mixer! So Jealous! And we added a quick trip to eat at the Cheesecake Factory. It was really peaceful shopping with just girls! :)

To top my Sunday off, I came home to a clean house, and all laundry done. Thank you Husband. I may have to leave you home from shopping trips a little more often! :)

This week is a busy one filled with class, a friends birthday celebration, tests and a check ride for Dallas, and trying to spend some much needed time with the hubs.

That's about all for now. I'll try to do better with blogging. Promise.

Friday jibber-jab.

Let me first start this post off by saying my boss is very generous with giving me "comp time" (AKA he asks me if I have important "errands" to run for him, which usually entails dropping a single letter off at the Post Office, and going home.) as he likes to call it. He is also very good at taking his own "comp time" and high-tailing it out of the office without anyone noticing.

Normally, I can pretty much count on getting out early on Fridays due to my boss' generosity.

Today, as it was nearing 3 O'Clock, I knew he was about to leave for the weekend, and ask me to run those "errands" I love so much.

But I drank about 3 bottles of water, and needed to go to the restroom really bad. I TRIED so hard to hold it until he left, and gave me the go-ahead, but I just couldn't wait. I went to the restroom, and literally RAN to get back to my desk to look like I was working ever so diligently on a Friday afternoon.

I get back to my desk, and BOOM.

He's Gone.

That sly bastard. ( I use the term "bastard" loosely, as I really REALLY love my boss!)

Sigh.

So now, since I was not properly asked to run those errands, and I really can't assume he would have asked me, I will sit here.

My only saving grace is that me and the hubs have a nice, long 3 day weekend!

We plan on going to Stillwater, Oklahoma, home of Oklahoma State University with a group of friends to try the very popular: "Eskimo Joes." If you ask ANYONE in Oklahoma, they will tell you its legendary, and you just HAVE TO TRY THOSE CHEESE FRIES!

Seriously, about 20 unsolicited suggestions on what to get when we go this weekend were the cheese fries.

So, I will get the cheese fries. And taste the rumored magic they put in to these things.

Also on the menu for the weekend is cleaning out the guest bedroom so Dallas can get his Drum Set setup! I am for it now, but I am sure when it actually happens, and he starts playing his drums while I am watching the latest Jersey Shore espisode educational shows on discovery channel, I may be singing a different tune.

The good news? I wasted about 20 minutes of the 4 O'Clock hour in writing this post, and its time to go home in 10 minutes.

P.S. If you were wondering how Miss Stella is doing after her Spay, she is recovering at home, and is milking this for all she can. She is being hand-fed and has been held all day. :)

Dallas' Super Special Dessert

Well, I know everyone was on the edge of their seats waiting to hear about this super special dessert I made for Dallas' birthday.

And.

It was a success!

Dallas said I have come a long way from burning break and bake cookies in Colorado Springs, which, in my defense, altitude really does play a big role in baking anything.

Anywho- The unveiling of the Red Velvet Cheesecake! Thats right! I said a Red Velvet Cheesecake. With a homemade, buttercream frosting!


We first had this dessert at the Cheesecake Factory.


And he loved it more than a human should love any dessert. And since we don't live near enough to a Cheesecake Factory for me to go buy a slice, I decided I needed to make one. 


Is it bad to be proud of myself? 'Cause I totally am!

Dallas had a really great birthday! We made his favorite for dinner: Shrimp Tacos and Black Beans, had some yummy cake, and he of course did a little studying!
Thanks to all of our friends and family that called and wished him a happy day! :) It really meant a lot!

This and That

Today begins semester 2 of prerequisites for nursing school. I am taking Anatomy and Physiology every Tuesday and Thursday evening. After this semester, I still have, depending on the program I go to, roughly 3 more classes to take before I can begin a program. I still feel like its an eternity away though.

This week is also special in that its my oh-so-handsome hubby's BIRTHDAY tomorrow! :) I am trying to make him something super special (At a dessert difficulty level of 10- Its a 3 day process- and involves no box of mix!). So far, so good. We will see what today brings though. :)

Tomorrow night I will make his favorite meal and have a couple friends over to celebrate! :) Pictures will be posted of my special dessert, and his "party."

This work week seems like its going to last forever. This is the first full week back from the holidays, but we do have a nice 3 day weekend coming up for MLK day!

Also- on a random note- I have just discovered the game of CRUD! What fun! We are gathering a ladies team right now to play against the other spouses on base. I am excited. It involves a pool table, two balls, heavy contact, buffoonery, shenanigans and nick-names. It gets pretty intense. And I like it!

Here's to praying I make it through this hectic week of classing, baking, birthdaying, cleaning, dog spaying, exercising, and who knows whatelse- ing.

Hello, 2011!

Well, I have obviously slacked a bit on being a regular blogger. But we are back to the real world from our 10 day, much needed rest. I find it completely odd and almost disgusting that we are already back to our normal schedule of working, flying, exercising, and watching smutty T.V.

Before the break, me and my friend Amberly threw Susan  a wedding shower! She got married January 1, 2011 in Lake Tahoe on a boat, and thought it would only be right to throw her a proper wedding shower with the rest of the girls! It was at my house, and we had a great time!

The party was great, and we got to have some great girl time and mimosas. She is still on her honeymoon right now in Maui- Im jealous, and ready for my friend to come back!

The Holiday was great! A lot of traveling. By Car. Which is Dallas' least favorite thing to do since he started flying jets that can get you from Oklahoma City to Houston in roughly 40 minutes. 

Christmas was fantastic and we enjoyed being together with our family more than anything.

The day after Christmas we had a party with friends which was SO MUCH FUN until my good friend Heather fed me a little too much "Hipp's Brew" which, if you know Ol' Meggy-Meg, you know she doesn't handle mixing vino with the hard stuff very well.  But up until that, the party was so great, and I so enjoyed seeing my buddies- including my beautiful pregnant friend, Nikki!



We played a few riveting rounds of catch phrase, and had a successful white elephant gift exchange coming home with a quesadilla maker, and a Scentsy wall plugin! :)

A few days later, we were off to Florida with Dallas' dad and brother, Dylan to visit Grandpa and Nana at their resort house. :)

 It was really our first time to be able to relax, and take in the 80 degree weather! We had amazing meals, shopping time while the guys played golf, and went to the Ritz-Carlton in Naples to see the two-story gingerbread house!

We spent New Years in Naples, and headed home on the 2nd, and drove back to good old Enid on the 3rd. The time seemed to fly by. Which is what almost always seems to happen.

So. You know when you get back from vacation, and your house looks like a train drove directly through it? Well, mine does. And I can hardly think straight with all the clutter. This weekend will be spent cleaning, and relaxing from our relaxing vacation. :) Funny how you need a rest from a vacation.


So, its a new year, and I could not be happier. 2010 proved to be a pretty terrible year for the most part, and for alot of people I know. 
Good Riddance, 2010!

I am ready to see what 2011 has in store for us, and I know, it HAS TO BE a far better year than the last. 

In other news, classes begin next Tuesday, and I will be taking Anatomy and Physiology....Seems like such a long road to nursing, but I know it will be worth it in the end. And I can't wait!
